Abstract

In order to study the degree of substitution (DS)and distribution of the carboxymethyl groups at C2, C3, C6 within anhydroglucose unit (AGU) of the products produced by homogeneous, ordinary procedures, and dough slurry, they were analyzed using chemical titration, Fourier transform infrared spectroscopy (FT-IR), nuclear magnetic resonance (NMR) and other methods. The results indicate that the distribution of groups of the carboxymethylcellulose produced by dough slurry, being more homogenous than the other two methods, furthermore, the distribution of groups within anhydroglucose unit (AGU) shows an order at the level of C2>C6>C3, however, which are C6>C2>C3 for other two samples produced by ordinary procedures and homogeneous methods.
