Abstract

The content of sesamin in the sesame cake has been identified and measured by gas chromatography-mass spectrometry (GC-MS). The antioxidant activity of cake's extracted part I was investigated by the thiobarbituric acid (TBA) method. The results show that the content of sesamin in the sesame cake is 0.27%. The extract part I shows significant antioxidant activity on spontaneous and induced lipoperoxidation by H2O2 in rat's liver.
